6 Tablespoons Butter0.5 Cup Flour5.5 Cups Milk2.5 Cups Smoked Gouda Cheese2 Cups Sharp Cheddar Cheese1.5 Cups Swiss Cheese1.5 Cups Parmesan Cheese0.5 Cup Dry Breadcrumbs1 Tablespoon Truffle Oil16 Ounces Corkscrew PastaPreheat oven to 350 degrees. Grease a 9x13-inch baking dish.In a large pan of lightly salted boiling water, cook macaroni for about 8 minutes, stirring occasionally. Drain well.Meanwhile, in a large pan, melt butter over medium-low heat. Add flour and beat until a thick, paste-like consistency is formed. Slowly, add 2 cups of milk, beating continuously until smooth. Stir in remaining milk. Increase heat to medium-high and cook for about 5-10 minutes, beating continuously.Add Gouda cheese, Swiss cheese, cheddar cheese and 1 cup of parmesan cheese and stir until smooth. Fold in cooked macaroni and remove from heat. Meanwhile, in a small bowl, mix together breadcrumbs and remaining parmesan cheese.Transfer macaroni mixture to prepared baking dish and sprinkle with breadcrumbs mixture evenly. Drizzle the mixture with truffle oil evenly. Bake for about 30 minutes.Remove from oven and keep aside for about 10 minutes before serving.
