0.5 Pound Store Bought Croissants0.5 Tablespoon Extra Virgin Olive Oil3.5 Scallions0.38 Pound Sweet Italian Sausage1 Teaspoons Fresh Sage4 Large Eggs0.5 Cup Heavy Cream1.5 Cups Whole Milk0.25 Pound Gruyère Cheese0.63 Teaspoons Kosher Salt & Freshly Ground Black PepperHeat your oven to 500 degrees. Lightly grease a 9x13 inch casserole dish with cooking spray.Spread a layer croissants on a large cookie sheet. Toast them in the oven for 7-10 minutes or until golden brown. Allow to cool slightly, and tear into bite-sized pieces.Heat oil in a large cast-iron skillet over medium-high heat. Sauté scallions, sausages, and sage for 5 minutes or until browned. Meanwhile, combine eggs, cream, milk, 1 1/2 cups of the cheese and salt, and pepper in a large bowl, whisking well to incorporate all the ingredients. Combine the sausage and croissants in another large bowl. Transfer the croissants and sausage mixture to the prepared casserole dish, in an even layer. Pour the liquid mixture over the surface of the croissants and sausage mixture. Cover with plastic wrap, and refrigerate for at least 4 hours, if not overnight. Preheat the oven to 350 degrees. Sprinkle the remaining cheese over the surface of the casserole and bake for 45 minutes. Allow to rest for at least 5 minutes before serving.
