Ingredients:
1 Quart Beef Stock1 Teaspoon Kosher Salt & Freshly Cracked Black Pepper4 Tablespoons Butter2 Tablespoons Olive Oil3 Cups Cremini Mushrooms2 Small Shallots4 Small Garlic Cloves0.5 Cup Brandy0.5 Cup Dry Red Wine1 Tablespoon Dijon Mustard1 Tablespoon Worcestershire SauceIn a large saucepan over medium-high heat, add stock and simmer until it has reduced to about 1/2 cup, about 1 hour.Season steaks well with salt & pepper on both sides. In a large cast-iron skillet over medium-high heat, heat 2 tablespoons butter and the oil until shimmering. Add steaks and sear until golden brown, about 3 minutes on each side. Transfer meat to a platter and cover lightly with a sheet of aluminum foil. Set aside.Add the mushrooms & shallots to the skillet and saute for 2 minutes. Add garlic and continue cooking until garlic is fragrant, about 2 minutes more. Stir in brandy until incorporated. Stir in wine, mustard, Worcestershire and stock. Allow mixture to simmer for 5 more minutes.Arrange the steaks in the sauce. Cook until meat registers 135 degrees (medium-rare) on a meat thermometer. Add remaining butter and stir into the sauce. Plate each steak and drizzle with sauce.
Be careful when adding the brandy, always make sure to add the liquir when the skillet is not on the direct flame, because it can ignite. If that happens, cover the skillet with a lid until flame is extinguished.
