Season steaks well with salt & pepper on both sides. In a large cast-iron skillet over medium-high heat, heat 2 tablespoons butter and the oil until shimmering. Add steaks and sear until golden brown, about 3 minutes on each side. Transfer meat to a platter and cover lightly with a sheet of aluminum foil. Set aside. Add the mushrooms & shallots to the skillet and saute for 2 minutes. Add garlic and continue cooking until garlic is fragrant, about 2 minutes more. Stir in brandy until incorporated. Stir in wine, mustard, Worcestershire and stock. Allow mixture to simmer for 5 more minutes. Arrange the steaks in the sauce. Cook until meat registers 135 degrees (medium-rare) on a meat thermometer. Add remaining butter and stir into the sauce. Plate each steak and drizzle with sauce.
