4 Large Egg Yolks1 Tablespoon Fresh Lemon Juice4 Cups Cold Water0.5 Cup Unsalted Butter0.125 Teaspoon Cayenne Pepper0.125 Teaspoon Salt & Freshly Ground Black PepperIn a double boiler or medium stainless-steel bowl, combine egg yolks and lemon juice and beat vigorously until thickened and the mixture is doubled in volume.In the bottom half of a double boiler or a medium saucepan over medium-low heat, add water and bring to a gentle simmer. Place top double boiler pan or bowl over the simmering water and beat mixture rapidly until sauce is just warmed. Do not let the bowl touch the water. Slowly add melted butter, beating continuously until the sauce is thickened and doubled in volume. Remove from heat and add cayenne, salt & pepper, beating continuously. Cover the bowl in plastic wrap and keep in a warm place until served, no longer than 1 hour. Keep any remaining sauce refrigerated in a covered container for no longer than 2 days. Reheat leftover sauce before using.
