Heat 1 teaspoon olive oil in a pan and scramble eggs. Transfer into a plate and set aside. Heat 1 teaspoon olive oil in the same pan and add chicken with 1/3 cup white part of scallions, ginger and garlic. Crumble chicken with the spoon and sauté for about 3 minutes. Add in bell pepper and carrots with 2 tablespoons of water and stir for 3 to 4 minutes. Then add in scallions, cabbage, prepared sauce and eggs and sauté only for 2 minutes.
