1 Pound Boneless Chicken0.25 Cup Hoisin Sauce1 Tablespoon Dry Sherry2 Teaspoons Chili Garlic Sauce3 Tablespoons Soy Sauce2 Teaspoons Corn Starch1 Teaspoon Sesame Oil2 Teaspoons Olive Oil2 Medium Eggs2 Teaspoons Fresh Ginger0.33 Cup Scallion1 Tablespoon Fresh Garlic1 Cup Red Bell Pepper1 Cup Carrot4 Cups Cabbage1 Cup Scallions10 Flour TortillasIn a small bowl, whisk together sherry, chili garlic sauce, hoisin, 1 teaspoon of sesame oil, cornstarch and pepper. Heat 1 teaspoon olive oil in a pan and scramble eggs. Transfer into a plate and set aside.
Heat 1 teaspoon olive oil in the same pan and add chicken with 1/3 cup white part of scallions, ginger and garlic. Crumble chicken with the spoon and sauté for about 3 minutes.
Add in bell pepper and carrots with 2 tablespoons of water and stir for 3 to 4 minutes.
Then add in scallions, cabbage, prepared sauce and eggs and sauté only for 2 minutes.
Serve warmed tortillas with chicken mu shu.
