0.5 Homemade Pie Crust2 Medium Russet Potatoes2 Tablespoons Olive Oil1 Teaspoon Old Bay Seasoning1 Large Egg0.5 Cup Sharp Cheddar Cheese3 Tablespoons ChivesPlace rack in the upper third portion of the oven, and preheat oven to 375 degrees.Arrange potatoes on a sheet pan and coat with a thin layer of oil. Sprinkle seasoning on top and roast for 15 minutes. Allow to cool on wire rack.In a small bowl, beat egg and set aside. Spread parchment paper on sheet pan and set aside. Roll dough disk to about 1/4″ thickness. Transfer the dough to the center of the sheet pan.Add a layer of potatoes to the crust and top with cheese and chives. Repeat layers until all ingredients are used.Starting with closet edge of pastry, pull edge up halfway toward topping. Continue this process and overlap completely around pastry. There should be an open circle of filling in the middle. Brush crust with egg and bake for 15 minutes until golden brown.
