4 Teaspoons Olive Oil1 Medium Onion1 Pound Ground Beef3 Teaspoons Kosher Salt2 Teaspoons Freshly Ground Black Pepper14 Cannelloni Shells6 Cups Water1 Container Whole Milk Ricotta3 Cups Mozzarella1 Cup Parmesan2 Tablespoons Fresh Italian Parsley Leaves2 Large Garlic Cloves3 Cups Marinara Sauce2 Tablespoons Butter
In a large skillet over medium-high heat, add 1 teaspoon oil, onion, meat, 1 teaspoon salt & pepper. Saute mixture until onions are translucent, about 5 minutes. Remove from heat and set aside. In a large sheet pan, brush 1 teaspoon of oil and set aside.
In a large saucepan over medium-high heat, bring water and 1 teaspoon of salt to boil. Add pasta and cook until al dente, about 4 to 6 minutes. Use a slotted spoon to transfer pasta to prepared baking sheet and set aside.Meanwhile, in a large bowl, add ricotta, 2 cups mozzarella, 1/2 cup Parmesan and parsley and mix. Add garlic, remaining salt & pepper and mix again. Add the meat mixture and mix well until combined.Preheat the oven to 350 degrees.
In a 13X9X2 casserole dish, brush the remaining oil. Pour 1 1/2 cups of marinara sauce over the bottom evenly.
With a spoon, stuff each cannelloni with 2 tablespoons of meat/cheese mixture and arrange in a single layer in casserole dish. Drizzle remaining sauce over the pasta. Sprinkle remaining mozzarella and Parmesan on top and dot all over with butter pieces. Bake uncovered until cheese is golden brown and sauce is bubbly, about 30 to 35 minutes. Allow to cool for 5 minutes before serving.
