Latkes (potato pancakes) are a must have at Hanukkah, but really are wonderful any time of year! Try topping with both apple sauce and sour cream. This recipe is also great for Passover (Pesach) as it also kosher for passover. Smart Recipes, American Recipes, Eggs Recipes, Recipes Eggs American Potato Latkes Potato Latkes Recipe | PT30M Serves 4 Ingredients: 2 Large Russet Potatoes 1 Medium Onion 4 Egg 0.5 Cup Matzo Meal 1.5 Teaspoons Kosher Salt 0.5 Cup Vegetable Oil 0.75 Teaspoon Freshly Ground Black Pepper Grate or process in a food processor (this is my preferred method) the potatoes and onion. Drain any excess liquid, and stir in the eggs, matzo meal, salt & pepper. Heat the oil in a large cast iron skillet over medium-high heat. Make sure the oil is hot before proceeding (you want a small amount of water to sizzle before frying the latkes). Spoon the potato mixture into the oil, and fry until the edges begin to crisp up, about 2-3 minutes and flip and cook for another 2 minutes. Serve with applesauce and sour cream.
