Smart Recipes, American Recipes, Beef,Vegetables,Grains,Seafood Recipes, Recipes Beef,Vegetables,Grains,Seafood American Cajun Dirty Rice & Shrimp PT55M Serves 4 Ingredients: 1.5 Cups Brown Rice 1 Cup Chicken Stock 2 Cups Water 1 Bay Leaf 0.25 Teaspoon Cayenne Pepper 0.5 Teaspoon Sweet Paprika 0.5 Teaspoon Fresh Thyme Leaves 1 Teaspoon Vegetable Oil 1 Large Onion 2 Medium Celery Stalks 1 Large Green Bell Pepper 3 Cloves Garlic 0.5 Pound Lean Ground Beef 1 Teaspoon Kosher Salt 0.5 Teaspoon Freshly Ground Black Pepper 1 Pound Shrimp 0.5 Medium Bunch Of Scallions Heat a Dutch oven on medium-high heat, add water, chicken stock, bay leaf, 1/2 teaspoon salt, 1/8 teaspoon cayenne, 1/4 teaspoon paprika and 1/4 teaspoon thyme. Bring mixture to a boil and stir in rice. Reduce heat to low, cover saucepan, and simmer until the rice is tender, about 20-25 minutes. Meanwhile, in a large saucepan over medium-high heat, heat oil and saute onions, bell peppers, diced celery, and minced garlic until soft, about 5 minutes. Stir in the ground beef, remaining salt, black pepper, and remaining spices. Continue to saute for another 15 minutes, or until the groudn beef is cooked through. Stir in the diced shrimp, cook covered for another 5 minutes. Remove and discard the bay leaf. Combine the rice and ground beef and shrimp mixture in the Dutch oven. Sprinkle with the scallions and continue to cook for anohter 5 minutes.
