1.5 Cups Brown Rice1 Cup Chicken Stock2 Cups Water1 Bay Leaf0.25 Teaspoon Cayenne Pepper0.5 Teaspoon Sweet Paprika0.5 Teaspoon Fresh Thyme Leaves1 Teaspoon Vegetable Oil1 Large Onion2 Medium Celery Stalks1 Large Green Bell Pepper3 Cloves Garlic0.5 Pound Lean Ground Beef1 Teaspoon Kosher Salt0.5 Teaspoon Freshly Ground Black Pepper1 Pound Shrimp0.5 Medium Bunch Of ScallionsHeat a Dutch oven on medium-high heat, add water, chicken stock, bay leaf, 1/2 teaspoon salt, 1/8 teaspoon cayenne, 1/4 teaspoon paprika and 1/4 teaspoon thyme. Bring mixture to a boil and stir in rice. Reduce heat to low, cover saucepan, and simmer until the rice is tender, about 20-25 minutes.Meanwhile, in a large saucepan over medium-high heat, heat oil and saute onions, bell peppers, diced celery, and minced garlic until soft, about 5 minutes. Stir in the ground beef, remaining salt, black pepper, and remaining spices. Continue to saute for another 15 minutes, or until the groudn beef is cooked through. Stir in the diced shrimp, cook covered for another 5 minutes. Remove and discard the bay leaf.Combine the rice and ground beef and shrimp mixture in the Dutch oven. Sprinkle with the scallions and continue to cook for anohter 5 minutes.
