Braised CeleryPT1H45M Serves 6 Ingredients: 3 Bunches Celery 1 To Taste Salt 1 To Taste Pepper 2 Cups Chicken Broth 4 Tablespoons Olive Oil 1.5 Tablespoons Red Wine Vinegar Preheat oven to 350 degrees F. Trim any discoloration from root bottoms of celery but let stalks remain attached. Cut each bunch of celery in half lengthwise. Cut tops off, leaving bottom halves about 5-inch long. Reserve some celery leaves for garnish. Arrange the celery in a shallow casserole dish in a single layer, cut side up. Drizzle with olive oil evenly. Mix together red wine vinegar and chicken broth. Place the broth mixture over celery and sprinkle with the salt and pepper. With a piece of foil, cover the casserole dish and bake for about 1¼-1½ hours. Serve hot or cold with the garnishing of a few celery leaves.
