1 Cup Giardinera2 Pounds Hanger Steak3 Tablespoons Extra-Virgin Olive Oil1 Large Green Bell Pepper1 Large Yellow Onion4 Clove Garlic1 Teaspoon Salt & Freshly Ground Black Pepper1 Cup Chicken Stock0.25 Cup Butter3 Tablespoons All-Purpose Flour1 Teaspoon Granulated Garlic1 Teaspoon Granulated Onion2 Cups Whole Milk0.75 Pounds Provolone Cheese4 Italian Hoagie RollsPreheat the oven to 350 degrees.In a cast-iron skillet heat a tablespoon of oil over medium-high heat. Add the peppers, onions, garlic, and a dash of the salt and pepper and saute for 10-12 minutes or until the onions become translucent. Add stock and reduce to a simmer. Meanwhile, in a small bowl combine 1 tablespoon olive oil and the sliced steak, tossing to combine. Set aside until the vegetables and sauce are ready.Meanwhile, in a saucepan, melt the butter over medium heat. Add flour, granulated garlic, granulated onion, milk, and remaining salt and pepper. Mix continuously until a thick sauce forms. Lower the heat to medium-low, and slowly stir in the cheese until it is melted completely.Heat another cast-iron skillet, or grill pan (my favorite way to cook hanger steak) over medium-high to high heat, and quickly sear the sliced steak, for about 5 minutes, turning occasionally. While the steak is cooking spread the butter evenly on the hoagie rolls, and toast on a sheet tray in the preheated oven.To assemble the sandwich, fill each roll with a healthy dollop of giardiniera, sliced steak, cheese sauce, peppers, and onions.
