0.75 Cup Greek Yogurt2 Large Lemons0.25 Cup Fresh Herbs1 Vegetable Oil0.75 Cup Flour0.25 Teaspoon Cayenne1 Large Onion1 EggIn a bowl, add yogurt, herbs, 1 tablespoon of lemon juice, salt and black pepper and beat till well combined. Refrigerate until poppers are ready to serve. In a bowl, mix together flour, lemon zest, cayenne pepper and 1 teaspoon of salt. Add the onion and toss to coat. In another bowl, add egg and remaining lemon juice and beat till well combined. Add egg mixture to the bowl of onion mixture and mix until just combined. With your hands, make the golf-sized balls from the mixture. In a pan, heat about 2-inch of oil to 350 degrees and fry poppers in batches for about 5-7 minutes. Transfer poppers onto a paper towel lined plate to drain. Serve these poppers alongside yogurt dip and lemon wedges.
