Ingredients:
3 Cups Freshly Squeezed Orange Juice2 Tablespoons Honey3 Tablespoons Cold Water1 Tablespoon Unflavored Gelatin2 Large Egg Yolks1 Cup Heavy Cream0.5 Teaspoon Orange Extract1 Teaspoon Pure Vanilla ExtractIn a small saucepan over medium-high heat, mix juice and honey and bring to a boil. Reduce the heat to low and simmer until liquid reduces, about 10 minutes. Remove saucepan from the heat. Meanwhile in a small bowl, add water and gelatin and stir until thickened.Pour gelatin into juice mixture and stir until it dissolves. Set aside and cool to room temperature. In a blender, combine the juice mixture, egg yolks, cream and extracts and pulse until combined.Pour mixture into popsicle molds, leaving at least 1/4 inch of room at the top. Add sticks in each mold and freeze for 12 hours.
