0.5 Cup Sugar0.5 Cup Warm Water1 Cup Cold Water1 Large Egg1.5 Ounces Active Dry Yeast4.5 Cups All-Purpose Flour2 Teaspoons Salt0.33 Cup Shortening2 Tablespoons ButterIn a small bowl, mix 1/8 teaspoon of sugar and warm water. Sprinkle in yeast and allow mixture to rest until foamy, about 5 minutes. Stir mixture to dissolve yeast.In a stand mixer, blend yeast mixture, shortening, salt, egg, cold water and remaining sugar. Gradually beat in 2 cups of flour on low speed for 2 minutes. Add remaining flour, 1/2 cup at a time until a soft dough forms. Coat the inside of a large bowl with cooking spray. Place dough ball in the bowl and turn it for an even coat of oil. Cover with a clean kitchen towel and allow dough to rest until doubled, about 1 1/2 hours. Punch dough down and refrigerate until almost doubled, about 2 hours.Coat 2 sheet pans lightly with cooking spray and set aside. Turn dough out on a lightly-floured work surface and divide into 24 equal portions about 1/2 cup each. Arrange 12 portions on each prepared pan with the sides touching. Brush the tops with butter and put in a warm place to double, about 1 hour.Preheat oven to 425 degrees. Bake until rolls are golden brown on top, about 15 minutes. Transfer to wire racks to cool.
