Coat a large baking dish with cooking spray and set aside. In a large saucepan over medium high heat, bring water to a boil. Add noodles and cook while stirring occasionally for 5 minutes. Use a colander to drain noodles well and transfer to a large bowl. Add butter to noodles and stir until melted. Stir in eggs, applesauce, raisins, sugar & vanilla. Transfer noodle mixture to prepared baking dish and sprinkle with cinnamon evenly. With a piece of aluminum foil, cover the baking dish and bake for about 30 minutes.
