0.5 Cup Apple Cider Vinegar0.25 Cup Olive Oil0.25 Cup Honey3 Tablespoons Dijon Mustard2 Cloves Garlic1 Tablespoon Kosher Salt1 Teaspoon Red Pepper Flakes1.5 Teaspoons Coarsely Ground Black Pepper2.5 Pound Pork Tenderloin0.25 Cup Honey3 Tablespoons Dijon MustardIn a large bowl, add 1/4 cup of honey, vinegar, olive oil, 3 tablespoons of Dijon mustard, garlic, salt, red pepper flakes and pepper and beat till well combined. Transfer mixture into a large zip-top plastic freezer bag with pork tenderloin. Seal the bag and shake to coat well. Refrigerate to marinate overnight, flipping occasionally. Remove pork from the refrigerator and bring to room temperature for at least 20-30 minutes before cooking.Preheat oven to 350 degrees. Lightly, grease a roasting pan.Remove pork tenderloin from bag and discard excess marinade. Place pork tenderloin into prepared roasting pan. Bake for about 40 to 60 minutes or until a meat thermometer reads 150 to 155 degrees while inserted in the thickest portion of pork. Remove tenderloin from oven and keep on a cutting board for about 10 minutes before slicing. Meanwhile, for sauce: in a bowl, add 3 tablespoons Dijon mustard and 1/4 cup honey and beat till well combined. Cut pork into desired slices and serve warm alongside honey sauce.
