Ingredients:
1 Tablespoon Sugar1 Tablespoon Peanut Oil3 Slices Fresh Ginger Root1 Roasting Chicken0.25 Cup Chicken Broth1 Teaspoon Whole Sichuan Peppercorns1 Cup Kosher Salt1 Tablespoon Shaoxing Wine Or Dry Sherry1 Whole Star Anise3 Cloves Garlic2 Tablespoons Light Soy Sauce1 Tablespoon Black Bean Sauce8 Whole Stems Chinese Parsley3 Whole ScallionsWhisk together sugar, chicken broth, peppercorns, wine, star anise, garlic cloves, soy sauce, bean sauce, parsley, scallions, peanut oil and ginger root in a bowl until combined. Fill the marinade into the chicken and tie or skewer it to shut. Let stand for 1½ hours. Preheat oven to 350 degrees, meanwhile cover the pot bottom with the salt (you may not need the entire cup there should be a good coating). Place chicken on salt base and pour remaining salt on top to cover the chicken. Bake chicken, covered, for 1½ hours. Remove chicken from the pot and dust off any excess salt that cakes on the chicken using a spoon carefully, because the salt is too hot. Wipe off any remaining salt using paper towels. Drain marinade and cut the salt-roasted chicken into bite-size pieces. Chicken can be prepared a day ahead if you want to serve it cold, no reheating needed. Or serve hot.
