1 Cup Raw Pumpkin Seeds0.33 Cup Olive Oil1.5 Teaspoon Kosher Salt1 Small Cardamom Pod1 Whole Clove0.5 Teaspoon Coriander Seeds0.5 Teaspoon Cumin Seeds1 Small Serano Chili1 Large Garlic Clove0.5 Cup Fresh Parsley0.5 Cup Fresh Cilantro1 Small Lemon2 Medium Seedless Cucumbers1 Large Avacado1 Large Red Onion4 Cups Fresh Arugula1 Tablespoon Toasted Sesame Seeds4 Medium PeachesPreheat oven to 350 degrees.On a rimmed sheet pan, arrange pumpkins seeds and toast for 3 minutes. Stir seeds and toast for 3 to 4 minutes more, until they are golden brown and puffed. Allow to cool.In a small bowl, transfer the seeds and add 1/2 teaspoon oil and salt. Toss to coat well.In a small skillet over medium-high heat, combine cardamom seeds, clove, coriander and cumin and toast until fragrant, about 2 minutes.In a spice mill or the bowl of a food processor, add 1/3 cup pumpkin seeds and spices and grind finely. In a large bowl, add ground spices, garlic, parsley, cilantro, lemon juice, 1/2 teaspoon salt and remaining 1/4 cup of oil. Add the cucumber and toss well. Let mixture sit for 5 minutes.Add peaches, avocado, and 1/3 cup of the pumpkin seeds to cucumber mixture and season with 1/2 teaspoon of salt. Toss well.In a large serving bowl, add arugula. Pour peach mixture over greens and toss gently to incorporate. Top salad with sesame seeds and remaining 1/3 cup of pumpkin seeds.
