Smart Recipes, Indian Recipes, Vegetables Recipes, Recipes Vegetables Indian Indian Style Peach And Cucumber Salad Indian Style Peach And Cucumber Salad Recipe | PT30M Serves 4 Ingredients: 1 Cup Raw Pumpkin Seeds 0.33 Cup Olive Oil 1.5 Teaspoon Kosher Salt 1 Small Cardamom Pod 1 Whole Clove 0.5 Teaspoon Coriander Seeds 0.5 Teaspoon Cumin Seeds 1 Small Serano Chili 1 Large Garlic Clove 0.5 Cup Fresh Parsley 0.5 Cup Fresh Cilantro 1 Small Lemon 2 Medium Seedless Cucumbers 1 Large Avacado 1 Large Red Onion 4 Cups Fresh Arugula 1 Tablespoon Toasted Sesame Seeds 4 Medium Peaches Preheat oven to 350 degrees. On a rimmed sheet pan, arrange pumpkins seeds and toast for 3 minutes. Stir seeds and toast for 3 to 4 minutes more, until they are golden brown and puffed. Allow to cool. In a small bowl, transfer the seeds and add 1/2 teaspoon oil and salt. Toss to coat well. In a small skillet over medium-high heat, combine cardamom seeds, clove, coriander and cumin and toast until fragrant, about 2 minutes. In a spice mill or the bowl of a food processor, add 1/3 cup pumpkin seeds and spices and grind finely. In a large bowl, add ground spices, garlic, parsley, cilantro, lemon juice, 1/2 teaspoon salt and remaining 1/4 cup of oil. Add the cucumber and toss well. Let mixture sit for 5 minutes. Add peaches, avocado, and 1/3 cup of the pumpkin seeds to cucumber mixture and season with 1/2 teaspoon of salt. Toss well. In a large serving bowl, add arugula. Pour peach mixture over greens and toss gently to incorporate. Top salad with sesame seeds and remaining 1/3 cup of pumpkin seeds.
