2 Pounds Eggplant3 Medium Eggs1 Cup Italian Style Breadcrumbs2 Tablespoon Italian Seasoning4 Ounces Parmesan Cheese0.5 Teaspoon Salt & Pepper0.25 Cup Fresh Basil Leaves2.25 Cups Store Bought Marinara8 Ounces MozzarellaPreheat oven to 400 degrees. Coat two baking sheets with cooking spray. Also, prepare a 8x11 baking dish with cooking spray.Whisk eggs with 3 tablespoons water until frothy. Combine breadcrumbs, Italian seasoning, half of the Parmesan cheese, salt & pepper in a shallow dish.Dip the eggplant slices in the egg mixture, and then in the breadcrumb mixture. Arrange on the cookie sheets. Cook for 15 minutes, turn and cook for another 15 minutes.Place 1/2 cup of the marinara sauce on the bottom of the baking dish, spread basil evenly over the sauce. Arrange eggplant slices in the sauce, overlapping slightly. Cover eggplant with remaining sauce. Cover with remaining Parmesan and mozzarella cheeses.Bake uncovered for 20 minutes, or till the cheese is golden brown and delicious. Allow to cool for 5 minutes, and then serve. Pair with a side green salad, or our Antipasto Panzanella.
