Smart Recipes, European Recipes, Eggs Recipes, Recipes Eggs European Healthy Eggplant Parmesan Healthy Eggplant Parmesan Recipe | PT1H30M Serves 6 Ingredients: 2 Pounds Eggplant 3 Medium Eggs 1 Cup Italian Style Breadcrumbs 2 Tablespoon Italian Seasoning 4 Ounces Parmesan Cheese 0.5 Teaspoon Salt & Pepper 0.25 Cup Fresh Basil Leaves 2.25 Cups Store Bought Marinara 8 Ounces Mozzarella Preheat oven to 400 degrees. Coat two baking sheets with cooking spray. Also, prepare a 8x11 baking dish with cooking spray. Whisk eggs with 3 tablespoons water until frothy. Combine breadcrumbs, Italian seasoning, half of the Parmesan cheese, salt & pepper in a shallow dish. Dip the eggplant slices in the egg mixture, and then in the breadcrumb mixture. Arrange on the cookie sheets. Cook for 15 minutes, turn and cook for another 15 minutes. Place 1/2 cup of the marinara sauce on the bottom of the baking dish, spread basil evenly over the sauce. Bake uncovered for 20 minutes, or till the cheese is golden brown and delicious. Allow to cool for 5 minutes, and then serve. Pair with a side green salad, or our Antipasto Panzanella.
