Pour mixture through a fine mesh sieve and measure out 3 cups of watermelon juice into a large bowl. In a small bowl, add 2 tablespoons of watermelon juice and cornstarch. Mix until smooth. In a medium saucepan over medium-high heat, pour remaining watermelon juice and bring to a boil. Reduce the heat to low and simmer 5 minutes, until the juice reduces a little. Add sugar and vanilla pod & seeds and whisk until sugar is dissolved. Stir in the cornstarch mixture and whisk into the saucepan. Simmer an additional 3 minutes, whisking occasionally. Whisk in lemon juice. Pour the pudding through a sieve, discarding the vanillia pod, into a measuring cup. Fill 4 ramekins with pudding and cover with plastic wrap. Chill in the refrigerator for at least 3 hours, until pudding is set. Garnish with whipped cream and pistachios.
