Drain well in a colander and set aside. In a medium saucepan over medium-high heat, melt 1 tablespoon of butter. Add flour and whisk until combined. Pour in milk gradually and whisk constantly until combined, about 2 minutes. Stir in the cream cheese until combined, then gradually whisk in shredded cheeses and salt & pepper until totally incorporated and smooth, another 2 minutes. Remove saucepan from the heat. In the same saucepan, add the macaroni to the cheese sauce and stir well until it is completely coated. Set aside. Preheat panini grill. Preheat the oven to 250 degrees. On a sheet pan, arrange 6 slices of bread. Lightly brush each slice with remaining butter and flip them over. Place 2 slices of pancetta on each slice then top with a scoop of mac & cheese. Add another slice of bread to make 6 sandwiches. Brush tops with remaining butter. Grill sandwiches golden brown one at a time in panini grill, about 3 to 5 minutes each. Cut sandwiches in half diagonally and serve. Transfer sandwiches to a cookie tray, and place in preheated oven to keep warm.
