Apple Bacon Cole SlawPT30M Serves 8 Ingredients: 0.5 Medium Head Of Green Cabbage 0.5 Medium Head Of Red Cabbage 1 Medium Carrot 12 Ounces Broccoli Slaw Mix 0.25 Small Bunch Of Scallions 2 Medium Granny Smith Apples 0.5 Cup Dried Cranberries 0.5 Pound Bacon 0.5 Cup Walnuts 1 Cup Greek Yogurt 0.5 Cup Mayonnaise 2 Tablespoons White Vinegar 1 Tablespoon Lemon Juice 1 Small Garlic Clove 0.5 Teaspoon Kosher Salt & Freshly Ground Black Pepper In a large skillet over medium-high heat, fry bacon until brown & crisp, about 5-7 minutes. Transfer to a plate lined with paper towels to drain. In a large bowl, combine shredded cabbage, broccoli slaw, carrot, and scallions. Toss well and set aside. In a small bowl, whisk yogurt, mayo, vinegar, lemon juice, garlic, salt & pepper until smooth. Set aside. Right before serving, core & julienne apples and chop the bacon. Add apples, bacon, cranberries, walnuts and dressing to slaw mixture. Toss well to coat evenly.
