Combine 7 tablespoons of butter, the grated ginger, minced garlic, curry powder and garam masala in a bowl and set aside. Lightly grease a large casserole dish with 1 tablespoon of butter, and arrange the shallots in a single layer and season with salt & pepper. Roast for 8 minutes.
