Smart Recipes, European Recipes, Dairy,Pork Recipes, Recipes Dairy,Pork European Pasta Carbonara Pasta Carbonara Recipe | RecipeSavants.com PT20M Serves 6 Ingredients: 0.25 Pound Bacon 8.5 Cups Water 4 Cloves Garlic 1 Pound Linguine 2 Cups Freshly Grated Parmesan Cheese 3 Large Eggs 1 Large Egg Yolk 1 Teaspoon Salt & Freshly Ground Black Pepper 1 Small Bunch Fresh Parsley In a large skillet over medium-high heat, add bacon and 1/2 cup water. Simmer until the water evaporates, about 8 minutes. Reduce heat to medium-low and cook until bacon is brown & crispy, about 8 minutes more. Transfer bacon to a plate lined with paper towels to drain. In a small bowl, drain all but about 1 teaspoon of the rendered bacon fat. Add garlic to the fat and saute until lightly brown & fragrant, about 30 seconds. In a medium bowl, add the garlic and 1 tablespoon fat. Whisk in eggs, egg yolk, Parmesan and pepper until well blended. Meanwhile in a Dutch oven over medium-high heat, bring remaining water to a boil. Add pasta and salt and cook until al dente, about 8-12 minutes. In a colander over a large bowl, drain the pasta well reserving at least 1 cup of the cooking liquid. Return the pasta to the Dutch oven. Meanwhile, slowly add a few tablespoons of the reserved cooking liquid to the egg mixture, whisking until a thick sauce has formed. Combine the pasta, egg sauce, and the reserved bacon; toss until incorporated and the sauce has become thick and coated the pasta. Garnish with the remaining grated Parmesan cheese and minced parsley.
