Bouillabaisse - Classic French Seafood SoupPT25M Serves 4 Ingredients: 1 Tablespoon Olive Oil 1 Medium Onion 2 Cloves Garlic 0.125 Teaspoon Saffron Threads 2 Cups Chicken Stock 1 Cup Your Favorite Jarred Pasta Sauce 1 Medium Orange 2 Bay Leaves 0.5 Teaspoon Chilli Powder 0.75 Firm White Fish Fillets 16 Medium Prawns 0.25 Teaspoon Salt & Freshly Ground Black Pepper In large Dutch oven, heat oil over medium-high heat. Saute onions and garlic for 2 minutes until soft. Stir in saffron, rosemary, chicken stock, pasta sauce, orange zest, chili powder and bay leaves. Season mixture with salt & pepper. Reduce heat and simmer for 5 minutes. Add prawns and fish to the soup and continue to simmer for about 8 minutes or until the seafood is tender. Garnish with the parsley leaves. Serve with a rustic peasant loaf, and creamy butter.
