0.25 Cup Unsalted Butter1 Bunch Flat Leaf Parsley0.5 Cup Heavy Cream8 Leeks1 Teaspoon Salt & Freshly Ground Black Pepper2 Shallots0.5 Cup Dry White Wine0.25 Cups Dry Vermouth12 Fresh Large Sea ScallopsPat scallops dry with paper towel. In a large saucepan, combine 1/4 cup butter, salt, 1/2 cup water and leeks. Cover and simmer for 15 minutes.In a cast iron skillet, melt remaining butter and sauté shallots until softened. Add scallops and sear 1 minute per side. Stir in wine and vermouth. Bring mixture to boil and reduce to a simmer for 2 minutes. Remove leeks from water (reserve cooking liquid), and transfer to serving platter. Top with scallops.In the same saucepan, pour in pan sauce from the scallops and bring to a boil until reduced by half. Stir in cream, salt & black pepper, and 1/2 cup of parsley.Pour sauce over scallops and leeks. Garnish with remaining parsley.
