Transfer meat to a plate lined with paper towels to drain. Set aside. Add onions, bell pepper & celery to skillet and saute until tender, about 4-5 minutes. Stir in rice and saute until the rice turns light brown & fragrant, about 2-3 minutes. Increase heat to high and stir in reserved meat, stock & Cajun seasoning. Cover and cook until rice is tender, about 20-25 minutes. Reduce heat to low and simmer another 5 minutes. Stir in scallions and sprinkle with parsley to serve.
