Transfer cashews into a plate and keep aside. In the same pan, melt remaining butter and sauté onion till just becomes golden. Add rice and sauté for a few minutes. Stir in stock, orange rind, mace and white pepper and bring to a gentle boil. Reduce heat to low and simmer, covered for about 20 minutes or till all the liquid is absorbed.
