8 Ounces Roast Beef8 Slices Provolone Cheese2 Large Green Bell Peppers2 Tablespoons Olive Oil2 Tablespoons Butter1 Medium Sweet Onion1 Tablespoon Garlic2 Cups Baby Bella Mushrooms0.5 Teaspoon Salt0.5 Teaspoon Black PepperPreheat oven to 400 degrees F.
Wash peppers and cut in half lengthwise. Remove and discard the tops and seeds of the bell pepper. Heat oil and butter in a large skillet on medium heat. Add onion and cook for about 4-5 minutes till just starts to become translucent. Add garlic and mushrooms and cook for about 9-10 minutes until tender. Add beef, salt and pepper and cook for about 5-10 until tender. Put the peppers in a large baking dish, open side up. Place a slice of cheese in the bottom of each bell pepper.Spoon the roast beef mixture evenly into the bell peppers. Top each bell pepper with the remaining cheese. Bake for at least 15-20 minutes until cheese has melted and bell peppers are tender.
