Transfer the bacon, to a paper towel lined plate, to drain excess grease. Sauté the onion, celery, jalapeno, thyme and garlic in the bacon fat, for about 5 minutes or until the onions start to become translucent. Stir in beer and cook for another 5 minutes, stir in the chicken broth and bring to a simmer. Melt butter in a separate skillet over medium heat and stir in flour, stirring continuously. Cook for 2 minutes until a light roux is formed. Transfer the roux to the soup and simmer for 10 minutes. Stir in heavy cream, cheddar cheeses, salt, black pepper and cooked bacon. Simmer for another 5 minutes. Serve with a garnish of cheddar cheese and green onions if desired.
