6 Cups Fresh Mixed Berries0.75 Cup Sugar0.25 Cup Fresh Orange Juice1 Vanilla Bean1 Cup Chilled Heavy Cream0.33 Cup Sour Cream0.25 Cup SugarIn a large bowl, add 1 cup of berries, orange juice and sugar and with a potato masher, mash until sugar just starts to dissolve. Add remaining 5 cups of berries and gently, stir to combine. Keep aside at room temperature for about 1-2 hours, tossing occasionally. For vanilla cream: With a knife, scrape the seeds from vanilla bean and transfer to a medium bowl. Add sugar, sour cream and chilled cream and sugar and with an electric mixer, beat until soft peaks form. Refrigerate to chill before serving.Serve berry mixture with the topping of chilled vanilla cream.
