4 Medium Russet Red Or Yellow Potatoes1.5 Tablespoons Olive Oil1 Zucchini1 Yellow Summer Squash0.5 Pound Mushrooms1 Small Yellow Onion0 To Taste Salt & Pepper1 Cup Marinara Sauce0.5 Cup Shredded MozzarellaPreheat oven to 400 degrees. When potatoes are almost done, in a large skillet, heat remaining oil over medium high heat. Add squash, zucchini, onions, mushrooms, salt and pepper and stir until vegetables are tender, 6 to 8 minutes. Once potatoes are done, remove from oven and turn the broiler on. Split open the potatoes with the bottom still attached. Top zucchini mixture over potatoes, pour marinara and sprinkle with mozzarella. Broil 2 to 3 minutes until cheese melts. Let cool a little before serving.
