Boil veggies until fork tender, about 10-15 minutes. Drain and allow veggies to cool. Peel and dice potatoes & carrots. In a large bowl, add potatoes, carrots, and peas and toss to combine. Add diced egg, pickles, & ham and toss well to combine. Add mayo, oil, salt & pepper and stir until all ingredients are incorporated. Chill for at least 2 hours or overnight for optimal flavor. Garnish with dill before serving.
