Ingredients:
3 Large Golden Yukon Potatoes8 Cups Water3 Medium Carrots1 Cup Frozen Peas4 Large Eggs1.5 Cup Mayonnaise1 Teaspoon Olive Oil1 Cup Diced Smoked Ham1 Teaspoon Kosher Salt0.5 Teasppon Freshly Ground Pepper1 Small Bunch Fresh DillIn a large saucepan over medium-high heat, add water, potatoes & carrots and bring to a boil. Boil veggies until fork tender, about 10-15 minutes. Drain and allow veggies to cool. Peel and dice potatoes & carrots.In a large bowl, add potatoes, carrots, and peas and toss to combine. Add diced egg, pickles, & ham and toss well to combine. Add mayo, oil, salt & pepper and stir until all ingredients are incorporated. Chill for at least 2 hours or overnight for optimal flavor. Garnish with dill before serving.
