Reduce the heat to low and simmer, covered for about 45-50 minutes or until beans become tender, stirring occasionally. Meanwhile, in a food processor, add tomato, onion, tomato, garlic, salt and black pepper and pulse until pureed. Transfer veggie puree to a bowl and keep aside.
