8 Large Eggs0.5 Cup Parmesan3 Large Fresh Basil Leaves3 Large Fresh Sage Leaves1 Teaspoon Fresh Rosemary0.25 Teaspoon Kosher Salt0.125 Teaspoon Freshly Ground Black Pepper3 Tablespoons Extra-Virgin Olive Oil1 Cup Onion0.33 Cup Whole-Milk RicottaPreheat oven to 400 degrees.Whisk together eggs, parmesan, basil leaves, sage leaves, rosemary, salt & pepper. Heat oil in a nonstick skillet over medium-high heat. Sauté onion in heated oil for about 6 minutes or until soft. Reduce the heat and whisk in egg mixture slowly. Spoon ricotta dollops over egg mixture. Cook about 2 minutes or until frittata sets. Bake in preheated oven for about 7 to 8 minutes until just set. Slide onto a platter, wedge and serve.
