Ingredients:
28 Ounce Tomatoes8 Flour Tortillas1 Cup Onion8 Ounce Canned Green Chilies2 Teaspoons Jalapeno Peppers1 Clove Garlic0.25 Teaspoon Salt1 Pinch Black Pepper0.5 Teaspoon Chili Powder2 Tablespoons Butter0.5 Cup Onion1 Pound Cooked Beef16 Ounce Refried Beans1 Pound Monterrey Jack Cheese6 Large RadishesIn a bowl, add tomatoes, 1 cup of onion, 4-ounce of drained green chilies, jalapeño, garlic, chili powder, salt and black pepper and mix well. Keep aside in room temperature for about 20 minutes.Preheat the oven to 350 degrees. For Burritos: In a 10-inch skillet, melt butter over medium-high heat and sauté ½ cup of onion for about 5 minutes. Remove skillet from heat. Add beef, refried beans and undrained green chilies and stir to combine.Carefully, separate tortillas. Place beef mixture over each tortilla evenly. Place 2 tablespoons of cheese and 2 tablespoons of salsa on top of each tortilla. Fold over the ends of each tortilla and then roll them up. Arrange tortillas in a 12x8x2-inch baking dish in a single layer, seam side down. Sprinkle with remaining cheese. Bake for about 15-20 minutes.Remove from oven and divide burritos and remaining salsa onto serving plates, serve with the garnishing of radishes.
