Smart Recipes, European Recipes, Vegetables Recipes, Recipes Vegetables European Pan Roasted Artichokes Pan Roasted Artichokes Recipe | PT15M Serves 4 Ingredients: 20 Baby Artichokes 8 Cloves Garlic 1 Cup Fresh Parsley 0.25 Cup Extra Virgin Olive Oil 2 Large Lemons 1 Medium Lemon 1 Teaspoon Salt & Freshly Ground Black Pepper Cut the artichokes in half and add to a bowl filled with water and lemon juice. Soak for 5-10 minutes. Drain and toss with 2 tablespoons of olive oil. Add remaining oil to a cast iron pan, over medium-high heat and sauté garlic until aromatic. Add artichokes and sauté for 5 minutes, flip, season and sauté for another 5 minutes. Transfer the sautéed artichokes to a large bowl and add lemon zest, lemon slices and parsley. Toss well and serve.
