3 Large Russet Potatoes2 Medium Onions3 Eggs0.33 Cup All-Purpose Flour0.5 Teaspoon Salt & Freshly Ground Black Pepper0.25 Cup Vegetable Oil0 ApplesauceWith a box grater, grate potatoes and onion finely.Arrange a large sieve over a bowl. Place grated veggies in the sieve to drain the excess juice. With a fork, gently squeeze out any liquid and transfer the veggies to another bowl.From the first bowl, pour off the clear liquid and save the starch at the bottom. With a spatula, scrape the starch and transfer to the potato mixture. Add eggs, flour, salt and black pepper and mix until well combined.In a large skillet, heat ¼ cup of oil over medium-high heat. Shape 1/4 cup of potato mixture into 4-inch thick pancake and fry for about 10 minutes or until golden brown from both sides.Transfer the pancake to a paper towel-lined plate.
