Sprinkle flour on top and toss to coat well. Stir in the stock, demi-glace, wine, garlic, bay leaf and simmer, partially covered for about one hour. Uncover and simmer until desired thickness is achieved. Season with salt and pepper. Set aside to cool slightly. Transfer cooled sauce to a food processor, and pulse until smooth.
