Basic Brown SaucePT1H35M Serves 10 Ingredients: 4 Tablespoons Unsalted Butter 1 Stalk Celery 1 Small Onion 1 Medium Carrot 1 Small Leek 4 Tablespoons All Purpose Flour 1 Cup Red Wine 4 Cups Beef Stock 0.5 Cup Beef Demi Glace 0.25 Teaspoon Dried Thyme 1 Bay Leaf 3 Cloves Garlic 0.25 Teaspoon Fine Sea Salt & Freshly Ground Black Pepper In a heavy pan, melt butter and saute carrot, celery, onion and leek until browned. Sprinkle flour on top and toss to coat well. Stir in the stock, demi-glace, wine, garlic, bay leaf and simmer, partially covered for about one hour. Uncover and simmer until desired thickness is achieved. Season with salt and pepper. Set aside to cool slightly. Transfer cooled sauce to a food processor, and pulse until smooth. Store in an airtight container, in the refrigerator for up to 3 days.
