1 Pound Elbow Macaroni2 Cups Heavy Cream2 Cups Shredded Sharp Cheddar Cheese0.25 Pound Cream Cheese1 Cup Parmesan Cheese1 Cup Gruyere Cheese1 Tablespoon Extra-Virgin Olive Oil1 Shallot2 Garlic Cloves1 Pound Lobster Meat0.25 Teaspoon Salt & Freshly Ground Black Pepper0.5 Cup Panko BreadcrumbsPreheat oven to 350 degrees. In a large pot, bring water to boil, add noodles and cook for 8 - 10 minutes or until al dente. In a double boiler, combine cheddar cheese, 4 ounces parmesan cheese, cream cheese and Gruyere cheeses. Heat the cheese mixture until well blended. Meanwhile, in a large pan, heat olive oil and then sauté shallots and garlic. Add lobster meat and cook until opaque about 6-8 minutes. Remove from heat. Drain pasta and add it to the lobster mixture. Add cheese sauce, salt and pepper and combine well. Place the macaroni in a casserole dish, sprinkle with remaining parmesan cheese and top with breadcrumbs. Bake for 6-8 minutes or until breadcrumbs are golden brown.
