6 Caribou Steaks2 Tablespoons Bacon Fat Or Lard1.5 Cups Red Wine3 Tablespoons Oil0.125 Teaspoon Ground Ginger1 Dash Hot Pepper Sauce0.5 Tablespoon Salt & Ground Black PepperFor sauce: In a large bowl, add wine, oil, hot pepper sauce, ginger, salt and black pepper and mix until well combined. Add steaks and coat with sauce generously. Refrigerate to marinate for at least 24 hours. Remove steaks from the bowl, reserving the sauce. With paper towels, pat-dry the steaks. Make a small cut at the edge of each steak and then coat with fat evenly. Preheat the grill to medium-high heat.Grill the steaks until medium-rare, flipping and coating with reserved sauce once halfway through.Remove from grill and transfer the steaks onto a warmed serving platter. Serve immediately with the remaining sauce as a dipping sauce.
