Preheat the oven to 250 degrees. Split the ciabatta rolls in half horizontally and spread 1/4 cup mozzarella on each half. On each bread slice, add three slices of tomato and 1/2 cup basil leaves, and top with another bread slice, brush both sides of the sandwich with at 1/4 teaspoon of olive oil. Grill on the preheated panini grill until toasted & golden brown, about 3-5 minutes. Transfer each grilled sandwich to a warmed sheet tray, and place in the preheated oven to keep them at temperature. Cut the panini in halves and serve.
