2.5 Cups All Purpose Flour2 Teaspoons Baking Powder1 Teaspoon Salt1 Cup Unsalted Butter1.75 Cups Granulated Sugar1 Medium Lemon3 Large Eggs0.5 Teaspoon Vanilla Extract0.75 Cup Kefir3 Cups Mixed Berries2 Cups Powdered SugarPreheat the oven to 350 degrees. Grease and flour a bundt cake pan.In a bowl, mix together 2 1/2 cups flour, baking powder and salt. In another large bowl, add sugar, 1 cup of butter and lemon zest and with a mixer, beat on high speed for about 5 minutes. Add eggs and vanilla extract and beat until well combined.Add 1/3 of the flour mixture and, beat on low speed until well combined. Add 1/4 cup of kefir and beat to combine. Add 1/3 cup of flour mixture and beat just combined, followed by 1/4 cup of kefir, beating just to combine. Finally, add third 1/3 cup of flour mixture, followed by final 1/4 cup of kefir and beat until just combined.In another bowl, add berries and 2 tablespoons of flour and toss to coat well. Gently, fold berries into the cake mixture.Place the cake mixture into prepared cake pan evenly. Bake for at least 60 minutes or until a toothpick inserted into the center comes out clean, rotating the pan once halfway through.Remove the pan from the oven and keep onto a wire rack to cool for about 40 minutes. Now, freeze the bundt pan for about 30 minutes. Remove the pan from freezer and carefully, invert the cake onto a platter.For the glaze: In a bowl, add 1 tablespoon of butter, powdered sugar and lemon juice and beat until very thick. Spread frosting over the top of the cooled cake evenly. Cut into desired slices and serve.
