1 Pound Sirloin Steak0.5 Teaspoon Salt & Freshly Ground Black Pepper0.25 Cup Butter1 Medium Yellow Onion5 Cloves Garlic1 Pound Sliced Mushrooms0.5 Cup Dry White Wine1.5 Cups Beef Stock1 Tablespoon Worcestershire Sauce3 Tablespoons All-Purpose Flour0.5 Cup Sour Cream1 Tablespoon Dijon Mustard0.25 Cup Fresh Parsley LeavesIn a large cast-iron skillet over medium-high heat, melt 2 tablespoons of butter. Season the steak with salt and pepper. Sear in the butter for 6 minutes, and set aside.Add the remaining 2 tablespoons of butter, and saute the diced onions for 3 minutes, add the garlic and mushrooms and cook for another 8 minutes. Stir in the white wine, and simmer for another 3 minutes. Combine the beef stock, Worcestershire sauce and flour, and stir into the skillet and simmer for 5 minutes. Stir in the sour cream and mustard; stir in the steak strips and simmer for another 5 minutes. Serve the Stroganoff over a mound of egg noodles and garnish with the parsley.
