1 Cup Dry White Wine0.5 Cup All-Purpose Flour4 Cups Reduced-Sodium Chicken Broth0.25 Teaspoon Coarse Salt & Ground Pepper0.25 Cup Turkey DrippingsTransfer the turkey from roasting pan.Place roasting pan over medium-high heat and cook for about 10 minutes, scraping drippings and browned bits from the bottom. Add wine and cook for about five to six minutes, stirring continuously. Slowly, add the flour, beating continuously. Cook for about one minute, beating continuously. Slowly, add one cup of broth and cook for about two to three minutes, beating continuously. Stir in remaining broth and four cups of water and bring to a gentle boil. Cook for about 10-15 minutes or until desired thickness, stirring occasionally.With a slotted spoon, remove neck and giblets from roasting pan. Through a fine mesh sieve, strain the gravy into a bowl. Discard the solids. Season with salt and black pepper and serve.
