2 Cups Sugar1 Cup Vegetable Oil4 Eggs2 Cups Flour1 Teaspoon Baking Soda2 Teaspoons Baking Powder0.5 Teaspoon Salt2 Teaspoons Ground Cinnamon3 Cups Raw Carrots1 Cup WalnutsPreheat oven to 350 degrees. Arrange a rack in center of oven. Grease 2 (9x2-inch) cake pans and line the bottoms of each pan with a circle of parchment paper. In a bowl, mix together flour, baking powder, baking soda, cinnamon and salt. In another bowl, add eggs and beat till frothy. Slowly, add sugar and beat till the mixture becomes thick and light colored. Slowly, add oil and vanilla beating continuously until well combined. Add flour mixture and mix until just combined. Fold in walnuts and carrots. Transfer mixture to prepared pans evenly. Bake for about 25-30 minutes or till a toothpick inserted in the center comes out clean. Remove from oven and keep on a wire rack for about 10 minutes. Carefully, invert the cakes onto the wire rack to cool completely. Cut into desired sized slices and serve.
