1 Tablespoon Unsalted Butter1 Medium Yellow Onion0.25 Teaspoon Ground Cloves1 Teaspoon Ground Cinnamon1 Cup Basmati Rice1 Bay Leaf1 Cinnamon Stick0.66 Cup Golden Raisins0.25 Cup Toasted Cashews1 Teaspoon Salt & Freshly Ground Black PepperSoak the rice in at least 2 cups of cold water, for 30 minutes to 1 hour, and with a fine-mesh sieve, throughly rinse rice and set aside. In a medium saucepan over medium-high heat, melt butter and sauté onion, cinnamon and cloves until onion becomes transparent, about 3 minutes. Add rice and stir to combine. Add raisins, cinnamon stick, bay leaf, salt & pepper and mix well.Increase heat to high and stir in 2 cups of water and bring to a boil. Reduce heat to low, cover, and simmer until water is evaporated and rice is tender, about 20 minutes.Remove from heat and cover for about 5 minutes. With a fork, fluff rice and garnish with toasted cashews.
