1 Cup All-Purpose Flour0.75 Cup Butter5 Tablespoons Sugar0.75 Teaspoon Salt3 Medium Egg Yolks2 Tablespoons Lemon Juice0.5 Cup Sugar4 Tablespoons Cornstarch0.5 Teaspoon Salt0.5 Teaspoon Cinnamon0.75 Cup Water2 Tablespoons Lemon Juice1.5 Teaspoons Lemon Juice2 Tablespoons Butter1 Teaspoon Vanilla Extract5 Cups Ripe PearsPreheat the oven at 375 degrees F.
In a large bowl, mix together flour, butter, 3 tablespoons sugar and salt until crumbly. Set aside.In a small bowl, mix together egg yolks and lemon juice. Gently fold the egg mixture into the flour mixture. Transfer 1 cup to another bowl for the base. Stir in the remaining 2 tablespoons sugar and set aside for the topping.
Press remaining flour mixture tightly into the bottom and sides of a baking dish.
Bake for 10-12 minutes until edges are lightly browned.
For the Filling: In a small saucepan, mix together sugar, 2 tablespoons cornstarch, salt and cinnamon. Slowly add in water and lemon juice and mix well until smooth. Bring to a boil over medium heat. Cook for 1-2 minute until thickened. Remove from heat and add butter and vanilla and mix till well combined.Toss pears with remaining 2 tablespoons cornstarch. Spread over crust. Pour over filling and top with reserved topping.Bake for 35-40 minutes until filling is bubbly and topping is golden browned. Cool on a wire rack.
