Line a sheet tray with a parchment paper and arrange bananas on it. Pierce bananas with a fork and bake for 10 to 12 minutes or until charred. Peel the bananas and mash with a fork in a bowl. Mix flour with salt and baking soda in a medium bowl. Beat eggs with sugar in a stand mixer for 5 minutes on medium speed. Gradually pour in the melted butter and oil while beating the eggs.
