Banana Bread Ice Cream SandwichesPT30M Serves 8 Ingredients: 3 Medium Bananas 1.5 Cups All-Purpose Flour 1 Teaspoon Baking Soda 0.75 Teaspoon Salt 2 Eggs 1 Cup Granulated Sugar 0.5 Cup Unsalted Butter 2 Tablespoons Vegetable Oil 0.5 Cup Whole Buttermilk 1 Cup Walnuts 1.5 Teaspoon Pure Vanilla Extract 6 Cups Your Favourite Ice Cream Flavor Preheat oven to 350 degrees. Line a sheet tray with a parchment paper and arrange bananas on it. Pierce bananas with a fork and bake for 10 to 12 minutes or until charred. Peel the bananas and mash with a fork in a bowl. Mix flour with salt and baking soda in a medium bowl. Beat eggs with sugar in a stand mixer for 5 minutes on medium speed. Gradually pour in the melted butter and oil while beating the eggs. Add vanilla, buttermilk, and mashed bananas to and continue to mix until well incorporated. Add the dry mixture to the wet mixture and mix well until combined. Fold in nuts and pour the batter into a well-greased loaf pan. Bake for 1 hour in the oven. Cool on a wire rack for at least 1 hour. Preheat a grill on medium-high heat. Meanwhile, allow the ice cream to rest at room temperature for 10-15 minutes. Let the ice cream sit at room temperature for 5 to 10 minutes. Slice the bread into 16 even slices. Grill the bread slices for 2 to 3 minutes per side and allow to cool. To assemble the ice cream sandwiches, place a scoop of ice cream between two slices of grilled banana bread (remove any excess ice cream). Wrap in a plastic wrap and chill in the freezer for at least an hour. Allow the sandwiches to rest on the counter for 5 minutes before serving.
